The area of the municipality of Caprauna is characterised by an incredible expanse of ancient dry-stone terraces. In the past, farmers used to grow turnips on the same land where wheat had been harvested to promote crop rotation and prevent soil “exhaustion”. Thanks to the altitude and the cool, damp climate, turnips grew in optimal conditions and with a particularly mild flavour.
